A good 19th century sycamore cream skimmer with a nice pale colour developed from many years of use in the dairy industry. These sycamore shallow bowls were used, as the name suggests n the production of butter, the milk was left to settle for 24-36 hours and the fat would rise to the surface and was skimmed off, this was then churned and made into butter etc.
